Thanksgiving Woes

This will be my first Thanksgiving as a wife, hostess and diabetic.

I’m scared.

Did I mention that this also gets to be a gluten-free and dairy-free Thanksgiving? Because of an on Thanksgiving Day due date for my sister, my mom wanted to have Thanksgiving for our family in Ohio… and I’m the only one of my siblings with the ability to host a family event. Brad and I are saving Thanksgiving (the only purpose of phrasing it that way is so we can feel like superheros).

Let’s chat about a diabetic-friendly and gluten/dairy-free Thanksgiving menu:

– Turkey = protein with no carbs and no gluten or dairy

– Mashed potatoes = made with almond or soy milk. Mashed potatoes on Thanksgiving are worthy of the insulin boulus.

– Vegetables = no gluten, dairy and also worthy of boulus

– Stuffing = my in-laws introduced me to this delicious chestnut stuffing that forgoes the typical bread-based stuffing model (which I don’t care for anyway) making stuffing totally possible on all fronts

Dessert is pretty much the only sticky Thanksgiving item that tradition basically demands. Chances are, Thanksgiving will be like any other event and I will just pass on dessert.

This will be the first time that my siblings will see the K-couple apartment as well as the first time that the apartment will have a toddler in it (that’s a whole different set of nerves). But here’s the part where I admit that I am excited to play the hostess and show off my ability to make edible things.

But I’m also sad, this is also the first major holiday without my dad.

  1. Just an FYI, Pillsbury makes sugar free cake mix now! (And icing too, but I haven’t seen that at my store yet.) Mixing a box mix with a package of Jello instant pudding (the small box, they make sugar free too!) and a little sour cream makes a cake taste super homemade. Just a suggestion!
